A chilled soup that gently surprises.
Sun-kissed fruit and seasonal vegetables meet in the oven first, where they develop sweetness, depth and a gentle smoky note.
Fresh basil adds a fragrant breeze. The balance of acidity and softness is brought together by Miracolo olive oil, which supports every step of the dish with its green and peppery soul – until, at the end, it lights up the plate. <\/p>\n

Ingredients<\/strong><\/h3>\n

For the roasted fruit and vegetables:<\/strong>
\n\u2022 400 g bell peppers, cleaned and cut into medium chunks
\n\u2022 700 g tomatoes, quartered
\n\u2022 350 g apricots, pitted and halved
\n\u2022 250 g carrots, peeled and sliced
\n\u2022 10 g salt
\n\u2022 50 g Miracolo extra virgin olive oil
\n\u2022 Freshly ground black pepper<\/p>\n

For blending:<\/strong>
\n\u2022 50 g thinly sliced red onion
\n\u2022 50 g red wine vinegar
\n\u2022 50 g water
\n\u2022 45 g Miracolo extra virgin olive oil
\n\u2022 15 fresh basil leaves<\/p>\n

To garnish:<\/strong>
\n\u2022 Fresh apricot cubes
\n\u2022 Fresh herbs of choice (e.g., basil, mint, chervil)
\n\u2022 Miracolo extra virgin olive oil<\/p>\n

Method<\/strong><\/h3>\n

Roast<\/strong>
\nPreheat the oven to 200\u00b0C (fan setting).
\nIn a bowl, combine peppers, tomatoes, apricots, and carrots. Season with oil, salt, and pepper.
Mix well and spread out on a baking tray, avoiding overlaps.
Roast for 25\u201330 minutes, stirring halfway through, until lightly golden. <\/p>\n

Marinate<\/strong>
\nIn a small bowl, cover the onion with vinegar and water. Let it sit for 30 minutes. <\/p>\n

Blend<\/strong>
\nTransfer the roasted vegetables to a blender. Add the onion with its liquid, basil and Miracolo oil.<\/x>Blend until smooth and creamy. If needed, adjust the texture with a little water.
\nSeason to taste with salt and a touch more acidity if necessary. <\/p>\n

Chill<\/strong>
\nPour the gazpacho into a container, cover and refrigerate until cold.<\/p>\n

Finish<\/strong>
\nServe chilled in individual bowls.
